The story of the Franklin Baker Company began in 1894, when Mr. Franklin Baker, Sr. (1846-1923), a flour miller from Philadelphia, Pennsylvania received a boatload of fresh coconuts as payment from a Cuban merchant for flour he shipped to Cuba.Mr. Baker, Sr. searched in vain for a buyer for the fresh coconuts and along the way, he learned a lot about the problems and opportunities of operating a coconut business. He became convinced that there was an untapped market for coconut. In 1895, he bought a small coconut business located in Arch Street in Philadelphia that was about to close and with his boatload of bartered goods, he entered the coconut business by developing a method to conveniently shred and produce coconut meat of uniform quality which he later on promoted to local housewives. From that modest start, Franklin Baker, Sr. grew to become the foremost supplier of high quality coconut products in the United States. By 1897, Franklin Baker, Sr. made so much progress with his new business that he decided to sell his flour business to concentrate on his new venture. His son, Franklin Baker, Jr. (1872-1946) eventually joined the business and established the Franklin Baker Company, Inc. In 1913, the manufacturing facilities were moved to Brooklyn, New York and later on to Hoboken, New Jersey.

It was about late 50’s when Catalina R. Berroya and Leon Berroya Sr. started as a fruit dealer in a local market. Later on, Catalina thought of putting fruit preserves in bottles as it was the “in thing” during that time. Business actually did well, and in order to expand their market; they started supplying local groceries and retail stores. It all started in 1987 with an old family recipe from Daddy Ding and an even older ancestral home kitchen from Mommy Rose’s side — a recipe for something good. Really good. They started experimenting with the old recipe and adding this and that and subtracting here and there until they came up with the House of Polvoron (HOP) Classic (which was unbranded then). The couple did everything in the beginning. From making the polvoron to hand carrying them to customers. The latter made Daddy Ding extremely fit and customers would call him “Rambo.” From Laguna, to Makati and then Ortigas. No place was too far for them coming from their place in Sucat. After some time, Mommy Rose took over the selling as Daddy Ding was in charge of production. It was a good switch as Daddy Ding proved to be a stickler for quality. A principle they still stick to up to this day.Everyone pitched in from the start, including the kids. School breaks were spent helping out in the kitchen packing the polvorons, answering phone calls, assisting Daddy Ding and a whole lot of other responsibilities. This was important as the children were taught the basics of the business which they will run someday. As the time passed, demand increased and more employees were hired. Polvoron lovers know quality when they tasted it and they wanted more. The amount produced daily is always sold out by the end of the day. And during the peak season of November and December, people were lining up as early as 7am while the polvoron is still being made. That’s why we never wavered in our commitment to make the best polvoron. It’s because of our loyal customers.HOP has gone a long way from the simple kitchen setup it started with.
