Here is its easy recipe.

Samosa Ingredients
Maida – 2 bowl

Ghee or oil – 1/3 bowl

Celery – 1/2 small spoon
Salt – as per taste or 1/2 tsp
Oil (for frying samosa) – as required

To fill the required material
250 grams cottage cheese
Cumin seeds – 1 small spoon
Ginger – 1 small spoon
Garlic (if you want) – 1/2 tsp
Coriander Powder – 1 small spoon
Cumin powder – 1/2 small spoon
Red chili powder – 1 small spoon
Salt – as per taste
Garam Masala – 1/2 small spoon
Chaat Masala – 1/2 small spoon
Green chili finely chopped – 1
Coriander finely chopped – 1 tbsp
Cashews chopped – 8-10
Raisins – 14-15

Method of preparation for Paneer Samosa:

First we have to knead the dough for the samosas. Take flour in a big vessel and add melted ghee, celery and a little salt in it. Now mix it well and try it with your hand. If the dough starts to be made into laddus after pressing it by hand, it means that the amount of ghee is fine. If it is not, then add some more ghee. Now knead the dough by adding water slowly, the dough should not be too hard nor too soft. Now cover the dough and keep it aside. As long as the dough is right, prepare the paneer to fill it.

Take out all the spices separately. Now mash the paneer. Now take all the spices (red chilli powder, coriander powder, cumin powder, garam masala) in a bowl and add a little water and mix it well. Now add 1 small spoon of oil in the pan. When the oil is hot, add cumin, ginger-garlic paste and chopped green chilies. When all is roasted then add wet seasoning to it. Fry it on a low flame till the oil starts separating. When the masala is roasted, then add chopped coriander to it. Stir lightly and then add the mashed paneer. Add chaat masala, salt and cashew nuts, raisins as well. Now fry it on low flame for 3 to 4 minutes. Paneer is ready to be filled.

Now take the dough and knead it again. Now take the dough like a paratha, make it round and add a little flour. Now roll it slowly and roll it out. Bale as big as the paratha and then cut it from the center. Now separate the two and take a part and apply water on its edges. Now raise both the sides and paste them together. After pasting it will become a deltoid. Likewise make all the samosas and then fry them on a slow gas in hot oil. The oil should be so that your samosas are completely immersed in it. Now let them fry slowly. Samosas take only 10 minutes to be made. When the samosas turn light brown, take them out. Hot samosas are ready. Serve it with mint chutney or tomato sauce.
